Walter returned to the Midwest to get married although he always planned to return to San Diego. In Milwaukee, Walter became executive chef at “Vinifera Restaurant and Wine Bar”. Vinifera became critically acclaimed as a 3 ½ star, top 20 restaurant for three consecutive years with Chef Walter at the helm. Walter was featured on “The Food Network program “The best of…” for his accomplishments and international flair at Vinifera.
Before returning to san Diego, Walter took a three year detour to Santa Fe, New Mexico where he served as executive chef at the historic ”Hotel St Francis”. In Santa Fe, between heading all culinary operations and launching an extensive wine program for the hotel St Francis, Walter found time to participate in the community through many charity events. Walter hosted events for Habitat for Humanity and served on the Santa Fe Wine and Chile committee and Santa Fe restaurant association.
In his spare time Walter enjoys the outdoors …, at the beach, hiking in the mountains or a round a Frisbee golf.
At Dussini, Walter will be focusing on the European, African and Middle Eastern Mediterranean Cuisines, showcasing products from local farmer markets, Fresh Seafood and emphasizing organics and all natural products.
